Subject: Karadin's Quick Fried Polenta Casserole

Polenta is a mixture of corn meal and water or stock, great for a change from pasta, rice, potatoes - not to mention its gluten free!

1 package ready made polenta (in a tube) 18oz or make your own from instant.
1 jar marinara sauce
2 cups Italian cheese shredded (mozzeralla, parmesan)
*meat optional 1/2 lb mild Italian sausage cooked, drained
olive oil

Remove wrapper from tube of polenta and cut into 1/2 thick slices. Prepare skillet by heating 3 tablespoons olive oil. Fry polenta slices in olive oil until they are golden brown, using spatula to flip (not tongs) and remove to plate covered with paper towels.

Lightly oil a glass or ceramic casserole dish and line with slices of fried polenta. Top with marinara sauce and sausage, then top with shredded cheese. Bake in the oven for 20 minutes at 400 degrees until cheese is melted and bubbling.

Allow to rest for five minutes before serving.

Don't forget fried polenta as a base for pizzas, appetizers, or just top with an egg and cheese for breakfast, the mild taste goes with anything!

i totally forgot about this recipe! thanks for the reminder; i'm gonna have it tonight with eggplant! :)
